Palak Soya curry

As everyone know soy is very good source of protein.If you want to eat healthy food yet very tasting soy palak curry is a very good option.This curry is filled with proteins,vitamins as it contains spinach and soy.



Ingredients:

Soy chunks : 1 cup(soak in water for 30 min)
Spinach : 1 bunch(blanch in hot water for 5 minutes)
Tomato : 1 big size chopped
Onion : 1 medium size chopped
Ginger garlic paste : 1 tsp
Green chili : 1-2
Dry red chili : 1
Red chili powder : 1 tsp
Coriander powder : 1 tsp
Cumin powder : 1/2 tsp
Turmeric powder : 1 pinch
Cumin seeds : 1 tsp
Mustard seeds : 1 tsp
Curry leaves : 10
Salt to taste
Oil
Coriander leaves for garnishing

Preparation:

1.Microwave soy chunks with water on high for 4 minutes or boil in water for 10 minutes, squeeze excess water from soya chunks keep it aside.
2.Heat oil in a pan add mustard seeds when they splutter add cumin seeds,dry red chili,cut green chili,chopped onion,ginger garlic paste and curry leaves.Fry for 5 minutes.
3.Add all the spice powders,salt and chopped tomatoes.Cook on medium heat until tomatoes become slightly soft then add boiled soy chunks.Cover the pan with lid and cook 15 more minutes stirring occasionally.
4.Finally add spinach and cook for 10 minutes without lid.switch off heat and garnish with coriander leaves.

Serve hot with rice or roti.

Stuffed ridge gourd/Guthi beerakaya

Whenever I want to treat my self with a nice curry I definitely choose stuffed vegetable curries and this stuffed ridge gourd is my all time favorite and  very easy to prepare compared to other stuffed vegetable curries.



Ingredients:

Ridge gourd : 3 medium size
Onion : 2 medium size
Red chili powder : 1 tbsp
Dry coconut powder : 2 tbsp
Garam masala : 1 tsp
Cumin seeds : 1/2 tsp
Mustard seeds : 1/2 tsp
Curry leaves : 10
Turmeric : 1/2 tspCoriander leaves
Salt to taste
Oil

Procedure:

1.Peel the ridge gourd,cut into 2 inch rounds and make a slits on one side into + shape.
2.Grind onions,coconut powder,red chili powder,turmeric,salt and garam masala into paste without adding any extra water.
3.Stuff ridge gourd pieces with above mixture.
4.Heat a pan add oil when oil becomes hot add cumin seeds,mustard seeds when they splutter add curry leaves,stuffed ridge gourd pieces and any leftover onion paste.
5.Cover the pan and cook on medium flame(sprinkle little water if needed) stirring occasionally,until ridge gourd pieces are soft. Finally garnish with coriander leaves.

Serve with rice or roti.

Bottle gourd patties

My mom used to make these bottle gourd patties(sorakaya appalu) as evening snacks which goes well with a hot cup of tea.In rainy season enjoying these crunchy patties with a cup of tea while listening to beautiful old melodies,what do you think isn't it heavenly feeling...

Ingredients:

Bottle gourd : 1 medium size
Rice flour : 2-3 cups(adjust as needed)
Sesame seeds : 2 tbsp
Chana dal : 2 tbsp
Green chillies : 7-8
Ginger : 1 inch piece
Coriander seeds : 1 tsp
Curry leaves : 10
Salt to taste
Oil to deep fry

Preparation:

1.Wash and grate bottle gourd finely without peeling the skin.
2.Make a paste of green chili and ginger without adding water.
3.Take a bowl add grated bottle gourd,sesame seeds,chanadal,ginger&chili paste,coriander seeds,curry leaves,salt combine well.Now add rice floor little by little until it become a nice dough.Don't add extra water,the water in bottle gourd is enough to make dough.
4.Make small balls of dough,now press the balls into patties using puri press or fingers by applying little oil to zip lock bags each side of puri press.
5.In a kadai heat oil,when oil becomes hot take the patty  from cover and slowly put in the oil and fry the patty on medium heat until edges become brown.Take it to absorbent paper.

Enjoy your bottle gourd patties with a nice cup of tea/coffee...

Bitter guard fry

If your family don't like bitter guard because of its bitterness try this fry,so that you can add one more healthy vegetable to your menu.

Ingredients:

Bitter guard : 4 medium size
Peanuts : 1/2 cup
Garlic flakes : 4 pieces
Chili powder : 1 tsp
Curry leaves : 1 stem
Mustard seeds: 1/2 tsp
Cumin seeds : 1 tsp
Turmeric :1/2 tsp
Salt to taste
Oil to deep fry

Preparation:

1.Peel bitter guard slightly and cut into 2 inch pieces.Take some water into bowl,add a pinch of turmeric and a teaspoon of salt.Soak bitter guard pieces in salt water for half an hour and squeeze the water from pieces.This process will eliminate excess bitterness.
2.Dry roast peanuts in medium flame,set it cool.Add garlic flakes,1/2 tsp cumin seeds,chili powder to peanuts and make it into coarse powder.Add salt mix well.(adjust salt/chili powder)
3.Deep fry bitter gourd until they are brown in color.Add these bitter guard pieces to peanut powder mix.
4.Take a pan add some oil,when oil is hot add mustard seeds when they splutter add remaining cumin seeds and curry leaves.Turn off the heat.Add this popu/tadka to above mixture.serve with hot rice.
